I thought it was good neat, but where it really got an opportunity to shine was in a citrus forward cocktail - a gimlet, or a fizz that is heavy on the lime. That chamomile and cassia note really respond well to bold citrus and some back sweetening, bringing great balance.

- Excerpt: Chamomile, nutmeg and rose petal infuse this gin made from a base of corn and Ohio apples. Look for a pale yellow hue and warm honey aroma. The palate suggests chamomile tea mixed with honey, and finishes with nutmeg and other baking spices, plus a mentholated exhale.

Ginvitational Day 20! Distilled at Watershed Distillery in Ohio, todays gin review covers Guild Gin. This gin is an American Style gin that is macerated in dried Chamomile flowers after distillation. Let's dive in.

Nose:
Sweet, mossy and loaded with Chamomile. Some nice pine, citrus and cinnamon as well. Hint of clove.

Taste:
Initially sweet on the palate, with a medium mouth feel. Faint prick of heat, before the herbal notes step in for real. Juniper leads, followed by very potent chamomile, pepper, clove, cassia and a bit of pine bark.

Finish:
Long on the finish but very heavy in the tea direction - cassia, juniper and more chamomile. Its not overpowering, but its bold and sticks around a great deal.

Overall:
This is not the most complex gin in the world.
